12 large white mushrooms (about 1-1/2 lbs.) 2 Tbsp. PromiseĀ® Buttery Spread 1-1/2 cups finely chopped zucchini 1 cup finely chopped red or orange bell pepper 1/2 cup finely chopped onion 8 ounces lean ground turkey* 3/4 tsp. ground cumin 1/4 tsp. salt 1/8 tsp. ground black pepper 2 Tbsp. shredded fat free cheddar cheese

Directions
Preheat oven to 375°. Remove and finely chop mushroom stems; reserve 1 cup.
In 12-inch nonstick skillet, melt PromiseĀ® Buttery Spread over medium heat and cook zucchini, red pepper, onion and reserved mushroom stems, stirring occasionally, 5 minutes or until tender. Add ground turkey and cumin and cook, stirring occasionally, until browned, about 5 minutes. Stir in salt and black pepper; set aside.
On baking sheet, arrange mushroom caps; evenly stuff with turkey mixture. Bake 25 minutes or until mushrooms are tender. Sprinkle with cheese.
*For Vegetarian Stuffed Mushrooms, substitute 2 additional small zucchini, finely chopped, instead of turkey.
